I mentioned in a post last week that I made some gluten-free crumpets so decided to kick Tastes on Tuesday off with that recipe since they really came out so lovely!
2 cups Natures Choice GF Cake Flour (You must use this flour – it is so far the only flour that works for this)
2 eggs
2tsp baking powder
62g marg, melted
1/2cup sugar
Milk/water – I used almost a cup of water because I can’t have milk.
1. Whisk the eggs and sugar together.
2. Add the melted butter to the egg mix.
3. Add the dry ingredients alternating with the milk. The mixture mustn’t be too runny so add the water slowly. It should almost be like a cake mix consistency.
4. Spoon onto a hot pan, wait until bubbles come through, turn over – it works better if you cook over a low heat – they burn easily!!
They were extremely moreish. David and all 3 kids gobbled them down!!

Julia you can sub the gf flour for normal flour – the original recipe isnt gf
