I made this for dinner tonight and the kids loved it. Jack refused to eat it though.
4 large chicken breasts cut into cubes
1 tablespoon ground almonds
1 tablespoon coconut
1 tin coconut milk
1 tsp coriander
1 tsp chilli powder
2 garlic cloves, crushed
1 tsp ginger, grated
1 tsp salt
1 chicken stock cube
1. Dry fry the almonds and coconut until light brown, set aside.
2. Fry the chicken, spices, ginger, garlic and salt. Add the coconut and almonds. Fry until the chicken is white.
3. Add the coconut oil and stock cube.
4. Cook for a further 15 minutes or until the chicken is cooked through.
