Ingredients
  1. 8 slices Sasko Low GI Whole Wheat Brown Dumpy/Low GI Seeded Brown Bread
  2. Butter to spread
  3. 250-300g store-bought/leftover roast chicken (skin included)
  4. 5tbsp mayonnaise
  5. 1 pinch salt
  6. 4 gherkins
  7. 1 head butter lettuce
Instructions
  1. Method
  2. Step 1: Shred the chicken and pop into a bowl with the mayonnaise and salt, mix well.
  3. Step 2: Slice the gherkins.
  4. Step 3: Spread a little butter onto each slice of bread.
  5. Step 4: Lay four slices out and top with slices of gherkin and equal amounts of chicken mayonnaise, finish with lettuce leaves and the remaining slices of bread.
  6. Alternative: For a spicy version add a dash of cayenne pepper to the mixture.
