Who doesn’t love a little friend chicken right? Not everyone can eat the batter that most fried chickens are friend in and, lets be honest, it is not the healthiest of meals!
This recipe is gluten-free and while you do need to fry the chicken you can use coconut oil, making it a little healthier. You can also bake the chicken pieces in the oven with some coconut oil, you just need to make sure to turn the pieces.
We all enjoy the Eastern flavours that make this dish a little different to the regular friend rice. If you want to make it more kid-friendly, reduce or eliminate the chilli.
