If you don’t have a slow cooker, you need to buy one! It makes cooking so much easier because you can literally throw a few ingredients into it, switch on and a few hours later dinner will be done! It is incredibly helpful for those days you have to work late or just aren’t in the mood to cook. A slow cooker is also perfect for winter soups and stews.
I made pulled pork for the first time for Father’s Day and I have no idea why I haven’t made this before! It was absolutely delicious and so easy to make. It is a great easy dinner, leave the pork to cook all day, grab some fresh rolls and dinner is served.
I am making this potato soup as soon as I get home. Doesn’t it sound insanely decadent?
Vegetable soups are the best for winter. I do cheat a bit and often buy the pre-packed mixes but you can add whatever you want to do into a veggie soup. This recipe uses mince but you don’t have to use mince, you can use some shin or stewing meat or leave it out completely. Checkers Country Vegetable mix is one of my favourite ones to use.
We eat a lot of chicken and I am always looking for different ways to cook the skinless chicken breasts. This looks like a super yummy recipe that is beyond easy to make.
Oxtail is my absolute best! I could eat it once a week if it wasn’t so expensive. It needs to be cooked for ages though which makes the slow cooker perfect. Checkers often have their oxtail on special, so keep an eye out and stock up when it is. Ostrich neck is a cheaper alternative, it is not as fatty as oxtail so it is a healthier option.
I love a good curry. The advantage of making a curry in the slow cooker is that you really get the flavours to develop and the meat gets super soft. Cooking anything in the slow cooker in coconut milk makes your house smell so delicious.
Spaghetti and meatballs! My kids would eat mince and pasta every single day if they could. I haven’t tried pasta in the slow cooker before but have done meatballs, it makes the tomato sauce beyond delicious. If you make the tomato sauce from scratch it is even better. If you make the meatballs from scratch you earn your cooking badge :-p
My family don’t love beef stew all that much but I love it. You can make it so rich and delicious and add in whatever veggies you want. The longer you cook, the more likely the veggies are to cook away into the gravy.
I made lentil sloppy joes for the first time a few years ago. I make a big batch and then freeze it for my lunches. Lentils are a great source of protein, so great for meat-free Mondays.
This is an Asian inspired chicken dish that sounds super yummy. We cook quite a bit with soy sauce and honey, so this would be a favourite.
