Thai Omelette with avocado, mung beans sprouts and spring onion

I have an omelette every morning for breakfast. Yes it may be boring but I do change up the fillings and it really is the one thing that keeps me full for ages. Everyone except Kiara eats eggs so we always have eggs in our house and there is always cheese and even a simple cheese omelette can be delicious.

I am so glad when avocados are in season because they are perfect with an omelette! So this Thai omelette is absolutely delicious, it has so much flavour and goodness! Perfect way to start the day (or end the day, if you are ok having breakfast for dinner)

Ingredients
  1. 2 free - range eggs
  2. 2 tsp Maizena corn flour
  3. 1 tsp lime juice
  4. 1 tsp fish sauce
  5. 1 tsp water
  6. 1 tsp sesame oil
  7. ½ tsp sugar
  8. 4 tbsp. oil for frying
  9. To garnish
  10. 20g mung bean sprouts
  11. sliced red onion
  12. ¼ avocado
  13. sprig of mint
  14. 2 spring onions, sliced at diagonal
  15. ½ red chilli, seeds removed and thinly sliced
  16. Sweet chilli sauce to serve
Instructions
  1. 1. Crack the eggs into a bowl
  2. 2. In a separate bowl add the rest of the ingredients and mix well, ensuring the Maizena dissolves.
  3. 3. Combine eggs and Maizena mix and whisk well until light and fluffy
  4. 4. Add oil to a non-stick frying pan and heat to a medium -high heat
  5. 5. Add the egg mixture to the pan and move egg around pan for a few seconds
  6. 6. Leave and allow the egg to cook and the edges to crisp
  7. 7. Remove from the pan and place flat on a clean plate
  8. 8. Top one side of the omelette with the fillings and fold over
  9. 9. Serve hot with a side of sweet chilli sauce

    I have to say, I’m not very adventurous, but rarely do I eat an omelette that doesn’t have at least a little feta on it.
